Pancake Waffles

Auo is at Kulosaari School, and today is her school fair. Her teacher is Daniel Wood and every year his class make and sell waffles as part of the fund-raising effort to send the class to camp.

Every year the parents make the batter and the children cook and serve the waffles. Here is Dan’s time-tested recipe for the batter for the waffles.

Make the batter, bottle it, and leave it in the fridge overnight.

Ingredients

3 egg yolks
3 egg whites
3.75 dl milk
250g flour
2 teaspoons baking powder
3 teaspoons sugar
1/2 teaspoon salt
8 tablespoons oil

Preparation

Mix egg yolks and milk
Add flour, baking powder, sugar and salt and mix well.
Add the oil
Beat egg whites until they are stiff and fold into the mixture.
Store in the fridge.
